Well, I finally made it to the dietician today and she has me on a revised Mediterranean Diet and also on a meal supplement called UltraMeal. I'm going to start it officially tomorrow, but I tried the meal replacement (its powdered to make shakes with) and it is not the best thing I've ever tried, but it did fill me up. I got the mocha flavor and it tastes okay at first but has a chalky aftertaste. They also gave me some recipes and ideas to add fruit and things like that to it to make it taste better, so I think I'm going to have to try that tomorrow.
She also told me that I need to be eating about 1600 calories a day(which is more than what I have been eating), and instead of counting calories, I am supposed to just choose certain foods from a list and eat the recommend servings that she gave me. It sounds simple enough now that i have it in black and white what i am supposed to eat, I just hope this works!
This is what she told me to eat a day from each list:
2 scoops medical ultrameal 2X a day
3 serv. lean protein (fist size)
2 serv. legumes (3-4oz not gonna happen)
atleast 4 servings of Veggies in category 1 (non root veggies) but can have unlimited amounts
3 cups of fruit
1 grain (fist size)
1 serv from veg 2 category (root veggies)
no dairy (since i'm lactose intolerant)
4 tsps of fat
1 serv of nuts/seeds
100oz of water
I also have a list so I know which foods I can choose from.
They also did a battery of tests and an EKG, (which came back fine, thank goodness, because my mom has CHF) and they are going to have me do lab work and come back in two weeks to see how I am doing and meet with the doctor. Oh yeah, and apparently, I'm half fat, not the best news I've heard, but you gotta start somewhere.
She also told me that I am supposed to be drinking about half my body weight in ounces of water, so I'm suppose to start drinking 100oz of water a day! That just seems next to impossible for me to do, but I'll try.
As of today, I've lost 10 lbs in the last 10 days, so i must have been doing something right! If anyone has any questions about the mediterranean diet, I would be more than happy to share any bit of info I have.

. I am issues with drinking enough water that my body needs. I have managed to increase the volume of my water intake though.
