As some of you know from my past posts, I've been a diet controlled Type 2 diabetic (after taking insulin for several years) for the last several years. I lost 100 pounds on Atkins and then the remaining 100 pounds on the Rice Diet. Despite the high carbs on the Rice Diet, I've been able to maintain my weight loss and control my diabetes for several years...until recently.
Due to the past year's lab results, my doctor suggested I go back on Atkins (low carb, moderate protein (30%), high fat (60%). She also recommended that I eliminate all fruit, grains, starches and gluten from my diet...which have the most immediate impact on the body's production of insulin. Since I didn't want to go back to taking insulin, and that seemed to be where my numbers were taking me, I complied.
The results have been amazing! My blood sugar numbers have been around 90-95 consistently, I've dropped the 10 lbs or so I've been struggling to lose and I feel fantastic! I'm not allergic to wheat or gluten, but removing them from my diet has made me feel so much better - no joint/muscle aches and the brainy fogginess is gone!
Out of habit I record everything I eat and while my carbs are between 30-60 since I'm trying to maintain and not lose, and I don't worry about the fats. Sometimes it gets as high as 60% because I put cream in my coffee, but most days I'm around 40-50%.
Just posting as food for thought for others struggling to get off their insulin.
