I found the salad...
Sweet Beet & Gorgonzola Salad
4 servings, 106 calories per serving.
6 Medium Beets, trimmed
1 T. Olive oil
1 T. balsamic Vinegar
1 t. honey
1 garlic clove, pressed or minced
1/2 t. soy sauce
1/2 bunch of chives, finely chopped
2 T. crumbled gorgonzola cheese

In large sauce pan, simmer beets in water to cover until tender but still firm, about 30 minutes. Drain, cool, and remove skin. Meanwhile, combine oil, vinegar, honey, garlic, and soy sauce in medium bowl. cut beets into 1-inch cubes; add to bowl. toss with dressing and chives. transfer to serving plate and top with cheese.
