well, with food sometimes you just gotta be careful with what you put in your mouth. Things like fake meats will quite likely contain a lot of preservatives, additives and chemicals you don't know, so its a good idea not to eat too much of it. I know that here, we can get vegetarian ham, which is made from soy beans. These are good for strict vegans. But again, you should limit your intake with these foods.
For tofu, there are various ways to cook it. You can deep fry it, eaten raw with a dash of soy sauce (although you'll need to be absolutely certain that the tofu hasn't been contaminated), or you can chop them up into smaller pieces, and stir fry them with other vegetables, such as capsicum, carrots, or as a noodles/rice dish, flavoured with salt, add some soy sauce and any seasonings you think may make the dish taste better. Experiment with different ingredients, and eventually you'll find a set you'll stick to and like

I'm not a vegetarian, but I think you can eat wholegrain bread. They're much healthier than plain white bread, and you can choose from a large variety of mixes (e.g. sunflower seeds etc). Study shows that around 90% of people around the world don't eat enough of it. Whole grains have been proven to reduce heart disease. You can gradually change your diet, from half white, half whole grain sandwiches, and eventually eat only whole grain bread.
I found some sites that you may be interested in. I've read the ingredients in the recipes, and they seem ideal. From the sounds of it, you sound like a really healthy teenager, so I wouldn't worry too much about losing weight. Good luck in finding your ideal foods
