    Default A good chicken recipe?

    Hi,

    Can anyone recommend a good recipe for baked or grilled chicken? I'm looking for something that is quick and easy to make that doesn't involve alot of cheese or high calorie sauces.

    I like to buy about 2 pounds of trimmed chicken breast and cook them all at the same time in the oven. I use some olive oil, garlic and pepper and cook them at 350 degrees for about 40 minutes.

    I then wrap each in aluminum foil and stick in the refrigerator. That way I have a good source of protein to put in my salads all week at work.

    The only trick to using chicken is to use chicken without the skin or extraneous fat. A lean chicken breast isn't high in calories. The skin and fat are.

    Grilling is great since it adds no fat to the dish. One of my favorite grilled chicken dishes is to butterfly the breasts, salt and pepper, grill what was the inside, flip it, fill it with whatever you like, close it, grill it the rest of the way. For filling I'm fond of garlic and basil. Sometimes I'll put some cheese as well as long as that fits into my daily calorie plan.

    We had chicken cacciatore for dinner this evening and even included the grated cheese. While this can be a luscious meal, it doesn't have to be high in calories if you watch what you include and how you cook it. Actually, the rice has much caloric content as the topping (if you exclude the cheese.)

    The high calorie chicken dishes are those that are cooked in the skin (or those cooked in fat, obviously.) You can modify those as well. As an example, make Coq au Vin and use skinned, lean chicken breasts instead of whole chicken parts. All you need to do is to use the near-fat-free chicken stock they sell in any supermarket. It isn't the same as the real thing but it can be very good and very healthy.

    Absolutely as long as you forego the fried chicken recommended in the post. Fried chicken is not particularly heathy and it is very fattening.

    I would recommend you to steam your chicken and just add a little bit of salt and pepper. Chicken breast are great but remember to remove the skin

    My mom is a fan of low calorie food and she likes to bake chicken. Its delicious and guilt free but I don't know she does it lol, so just searched for a low calorie chicken recipe and got this off cooks


    LOW CALORIE CHICKEN
    • Chicken, cut up and skinned
    • Good Seasons low calorie Italian dressing mix
    • Salt and pepper to taste
    Place chicken in baking dish and sprinkle with salt and pepper. Sprinkle with dry dressing mix. Bake at 400 degrees covered for about 50 minutes. Remove cover and bake for 10 minutes more.

    The Italian dressing will taste great with baked chicken. I love Italian spices a lot. They have this very rich aroma that makes eating so much fun . This will taste better with baked potatos and garden fresh salad. ! I feel hungry just thinking about it already .
