    Default mediterranean Diet Chicken stir fry

    I found some recipes for this mediterranean Diet in my diet book from the doctor and thought this sounded good. I belileve it is a recipe for 1 serving, so you would probably have to adjust it accordingly


    Chicken vegetable stir fry

    3oz chicken breast
    olive oil
    red or green peppers
    asparagus
    onion
    minced garlic
    minced ginger
    soy sauce

    3oz chicken breast (cut into strips), stir fry in 1 tsp olive oil (remove from pan before stir-frying the veggies);i cup asparagus, cut into chunks, 1/2 cup each red or green peppers, sliced onion, and 1 clove minced garlic, stirfried with 1tsp each olive oil and fresh minced ginger until softened; add stir fried chicken (or tofu) and 1-2 tsp soy sauce; salt and pepper to taste.


    I personally would add broccoli, snow peas, and water chestnuts since those are part of the mediterranean diet

    Does your book say how much calories per serving this recipe has? It would be great if we know the nutrional information as well.

    try this, grill the chicken on a outdoor grille, and then add. give it a slightly dif flavor.

    This is a great recipe! I have to try this one out. I am a fan of chicken and vegetables stir fry. If you want to cut down on calories, you can also use tofu instead of chicken. Of course it isn't as tasty but it's definitely healthy!

    I love tofu! And I have to say that this is a great recipe. Thanks for sharing this with us kbrown8! I have also tried stir fried vegetables with tofu and it is delicious and definitely guilt free. I have also tried it fried, then mixed a little of oyster sauce and chinese soy sauce together, then added fresh onions, and spring onions. I first tasted it when we wen to a chinese restaurant and it was delicious so I had to try it at home too

    I love Chinese foods because most of them are either steamed or boiled. I just avoid too much fried foods though because once I start, I couldn't stop anymore . It's just so delicious. I don't really get fat but I don't like the feeling of over eating. I like the recipe you shared here kbrown. Anything with veggies just tastes so good especially broccoli!

    This sounds like a delicious recipe. I love garlic and ginger on chicken because it gives it a distinct taste. I love to stir fry vegetables like broccoli, cauliflower, cabbage, carrots, and green beans with a little bit of chicken too. I haven't tried it with tofu though and I want to try that too. I usually just fry tofu in olive oil and add salt and pepper for seasoning. Thanks for bringing it up!
