    Default Ice Cream Treasures

Are you worried of having a cup of ice cream because of possibly gaining weight? Try this great recipe and enjoy this dessert guilt free courtesy of find.myrecipes.com!

    Ingredients

1 1/2 cups (6 ounces) chocolate-covered English toffee candy bars (such as Heath), crushed
8 cups vanilla reduced-fat ice cream (such as Healthy Choice), softened
4 cups crispy rice cereal squares, crushed (such as Rice Chex)
2 cups whole-grain toasted oat cereal (such as Cheerios)
2/3 cup packed dark brown sugar
    1/3 cup slivered almonds, toasted
1/3 cup flaked sweetened coconut, toasted
    2 tablespoons butter, melted

    Preparation

Stir crushed candy into ice cream. Cover and freeze until ready to use.

Combine cereals, brown sugar, and remaining ingredients in a large bowl, stirring until well blended. Press half of cereal mixture in bottom of a 13 x 9-inch baking pan.

Let ice cream stand at room temperature 20 minutes or until softened. Spread softened ice cream mixture over cereal mixture; top evenly with remaining cereal mixture. Cover and freeze 8 hours or overnight.

Thanks you for sharing this recipe mikaela. I am a big fan of ice cream and I especially love it with chocolate chips. I can only imagine how tasty it is with flaked sweetened coconut and almonds. I cannot wait to try this

Yeah I agree with you wildman and I do agree that this is a great recipe. I don't eat ice cream that much but if you want to add chocolate chips, go for the healthier option and use dark chocolate instead. It's low in sugar and has more antioxidants

Thanks for the suggestions guys . I do intend to use a dark chocolate chip because it tastes good on cold desserts. I have to try this one out soon!

Ice cream is one of my weaknesses. I had to come up with a healthy alternative. Fortunately I love the taste of berries - blueberries, raspberries, strawberries, and blackberries. This one is fairly low cal and nutritious. Mildly sweet with a strong fruit flavor.

12 ounces of frozen berry yogurt (your choice of berry)
3 cups of frozen mixed berries
    1 1/2 cups of milk
1 or 2 tbsp of fructose

Blend in blender. You may have to stop the blender to push some of the frozen berries and such down until they are chopped. Freeze for a couple hours until semi-frozen.

I love ice cream so much and I don't think I can completely say no to it. I have very few now that I am on a diet. It's very difficult to stop all the time but I just make sure that I have 2 spoonfuls every time I eat ice cream (not everyday though). Sometimes I grab for yogurt instead of ice cream if I want to eat more. @Mikaela and BJJones37, these are really awesome ice cream recipes and something that I can definitely do. Thank you!!! I really appreciate it

Greek yogurt is best because it has more protein. I do sometimes find myself cheating and have a small amount of ice cream instead of yogurt. I just don't want to stress myself sometimes to always watch what I eat. Stress can cause hormonal imbalance which can lead to over eating someday and I don't want that LOL
