    Default Buckwheat Crepes with Apple Filling

    I found this amazing low calorie crepe recipe and believe me this is so good. It's just mouth watering you cannot believe how diet friendly it is! Anyone on a diet can have this for dessert and not feel guilty at all! I found this recipe from msn.com and I hope you all like it

    Ingredients:

    For Crepes:
    1/2 cup white flour
    1/2 cut buckwheat flour
    4 tbsps sugar
    1/4 tsp salt
    1/2 cup heavy cream
    1 tsp vanilla
    2 large eggs
    2 tbsps butter, melted

    For Apple Filling:
    3 apples cut into chunks
    1/2 cup sugar
    1 tbsp light corn syrup
    4 tbsps butter
    1 tsp vanilla
    1 tbsp lemon juice

    For topping:
    vanilla ice cream
    prepared whip cream topping

    Directions:

    To make topping: Combine yogurt and maple syrup in a small bowl. Set aside, refrigerated, until ready to use.

    To make crepes: 1. Place flours, salt and sugar in a bowl and combine well, or pulse in food processor.

    2. Combine milk, brandy, eggs and melted butter in measuring cup. Add to dry ingredients, scraping down the bowl to be sure everything is blended.

    3. To cook crepes, heat a crepe pan or medium skillet. When pan is hot, lightly grease it with a dab of butter. Add 1/4 cup crepe batter to pan and swirl just enough to coat, pouring excess back into batter bowl. Cook crepe until nicely browned, about 1 minute, then loosen edges and flip to cook the other side until browned. Repeat, using all the batter. Stacking crepes on a plate to keep warm (cover loosely with foil).

    To make filling and assemble crepes: 1. Melt butter in a medium sauce pan and gently sauté apple slices until they begin to soften.

    2. Add cane juice crystals, molasses, brandy and lemon juice. Continue to cook apples on medium heat until juices start to thicken, about 5 minutes.

    3. Fill crepes with warm apple filling. Serve garnished with a dollop of yogurt topping.

    Nutritional Information:
    Per serving: 184 calories; 9 g fat ( 5 g sat, 3 g mono); 67 mg cholesterol; 23 g carbohydrate; 5 g protein; 1.5 g fiber; 64 mg sodium; 161 mg potassium

    I love crepes and I'd love to have this for breakfast with hot chocolate. I can skip the whipped cream and ice cream for a lighter breakfast. Thank you. I just saw this section and I couldn't believe my eyes. You have a lot of great recipes here!

    I think the toppings are optional, otherwise, the crepe would contain more than 184 calories per serving. Anyway, I'm sure this will taste good without the whip cream or ice cream
